De Cecco Macaroni on Guitar 13 - 500 grams

Originally from Abruzzo, Maccheroni alla Chitarra correspond to an original long format with a square section. Historically, pasta was cut with a special tool called a "guitar", formed by a wooden frame on which thin steel wires were stretched. The dough, not excessively thin (with a thickness corresponding to the space between one thread and another), was placed on the threads and then cut by pressing on them with a special rolling pin.
